Vegan Bakery Bunnie Cakes Launches Vending Machine at Miami Airport

When Mariana Cortez made the decision to permanently close her vegan bakery, Bunnie Cakes, she was pleasantly surprised by the heartfelt farewell she received. This beloved baker, renowned in Miami for her delectable bite-sized plant-based cupcakes and confections, each adorned with a loving touch, was deeply moved by the presence of familiar faces at her colorful bakery. “I saw all the friends I had made over the years. I really felt good to know the impact we made in the community.”

Bunnie Cakes Expansion to Bring Nationwide Grocery Availability

Founded in 2009 in Miami’s vibrant Wynwood neighborhood, Bunnie Cakes is now on the brink of a major transformation. Cortez hints at a significant agreement with a national grocery chain, poised to introduce the brand’s vegan, kosher, and soy-free ready-to-bake batters and frostings to a nationwide audience. The collection includes refrigerated cake batter flavors like vanilla, chocolate, and red velvet, along with vanilla and chocolate frostings. A nationwide launch is anticipated in early 2024.

Bunnie Cakes’ Sweet Arrival at Miami International Airport

Cortez has also sealed a deal with Miami International Airport, where travelers can now savor Bunnie Cakes’ delectable offerings via vending machines at key locations. These machines, strategically located at gates B21 and G15, with a third one opening at B49, offer four- and six-packs of mini cupcakes, cake sundaes (cakes in a cup), and mini cakes. The four-inch cakes have become a popular souvenir choice among tourists passing through the airport.

Vegan Cupcakes for South Florida Residents

While Bunnie Cakes is gearing up for national success, they remain deeply rooted in their local community. They currently deliver from Miami to West Palm Beach through Uber Eats, ensuring that their delightful creations are accessible to South Florida residents. Additionally, local Miami Whole Foods Markets proudly stock Bunnie Cakes’ cupcakes, cakes, and cake sundaes.

From Necessity to Innovation

Cortez embarked on her vegan baking journey in 2009 when her two-year-old son, Luke, was diagnosed with multiple allergies. Her passion for creating vegan options at home eventually led to the opening of Bunnie Cakes. Word of mouth spread quickly, establishing Bunnie Cakes as a haven for those seeking delicious treats that catered to various dietary restrictions. Reflecting on her journey, Cortez shared, “We positioned Bunnie Cakes in Miami very well, but my goal now is to position the brand as a vegan household name.”

Cortez is enthusiastic about the challenges ahead, as she takes Bunnie Cakes from a local gem to a national sensation. “I’m very excited. There’s a lot of room to grow. I saw that little space 14 years ago and saw an opportunity. Now I see the opportunities for the future.”
